Vinification | Harvest begins at the end of August. The grapes are hand-picked, then transported and processed on the same day. Fermentation takes place 50% in stainless steel tanks and 50% in oak barrels. The wine matures in these same vessels until the following spring. |

Antonio Fattori, a winemaker by destiny and an oenologist by passion, carries on the legacy of his father—together with his brother Giovanni—and before him, their grandfather, the original Antonio Fattori, who in the early 1900s planted the first vines on the hills of Terrossa, producing and selling his wines to the taverns of Verona and Vicenza.
At the heart of the estate lies a commitment to experimentation, scientific method, and innovation. The goal is to produce in harmony with nature, using natural and sometimes unconventional methods: organic fertilization and green manure to enrich the soil, sexual confusion techniques to control harmful insects, and even the use of essential oils and grapefruit extracts to protect the vines.
Whether planting new vineyards or reviving ancient ones, using concrete, wood, or steel in the cellar, or fermenting at increasingly lower temperatures—everything is carefully thought out, studied, and tested with the aim of creating vibrant, captivating wines that win over consumers, wine professionals, and markets across the globe.
