Structure intense et élégante, avec des notes fraîches de fruits rouges mûrs, sublimées par une légère touche épicée. Raisins de Ciliegiolo vinifiés en pureté, sélectionnés parmi les meilleures grappes récoltées dans un seul vignoble. Fermentation naturelle avec des levures indigènes. Seulement 2000 bouteilles par année.

The Ciliegiolo grapes, sourced from a single vineyard in Magliano in Toscana, undergo a rigorous selection during harvest before being immediately brought to the winery, where they begin a long fermentation in small stainless steel tanks. To preserve and enhance the typical characteristics of this great grape variety, several pump-overs are performed daily, and the must temperature must never exceed 26 degrees Celsius.

At the end of the alcoholic fermentation, after racking, the wine undergoes a period of aging on the lees, during which it completes malolactic fermentation. It is then transferred into third- and fourth-use barriques and tonneaux, where it remains for at least 8 months. After this maturation period in wood, the Ciliegiolo is bottled and continues to age for an additional 6 months before being released to the market.
